I want juice!

I think Erman and I are off to a good start this year with our slow carb meals  :D  We are also making more healthy smoothies now.  My fave blends are: 1. celery, pineapple and cucumber 2. spinach, ice and coconut oil 3. apple, celery and ginger.  
The next goal in our get healthy list is a slow juicer - especially after watching Fat, Sick and Nearly Dead.  But in the mean time, I wish that I'll be lucky enough to win in ToT's Goodie Giveaway

Just look at those juices!  I'd love to try the green bomb (Celery. Cucumber. Coconut Water. Malunggay. Pineapple. Romaine Lettuce. Spinach.) and the Red giant (Beets. Carrots. Ginger. Pineapple). Yum :)  I guess I also need to start reading about composting because there is a lot of peelings, seeds left over after juicing.  I will also need a lot of plastic bins for those :D

Meal Planning

Do you plan your meals for the week?  I do a lot of cooking so I make it a point to organize my schedule and try to think of ways to be more efficient.  A huge chunk of my Saturday morning was spent slicing, mixing, mincing.  At the end of the day I had jars filled with pesto, minced garlic, crushed ginger with green onions and shredded carrots.  I also had about 20 cups of chicken stock and several types of marinated chicken.  Yum :)
Seems like a lot of work but it's really worth it since I get our meals prepared faster during the week.  For lunch today we had Bibimbap without the rice (we're limiting our carb intake so yup no rice).  It was easy to make considering that I had a lot of the stuff needed ready - just had to prep the spinach, sprouts and the fried egg. 
Next time I'd like to try freezing herbs and essential juices like lime, lemon and calamansi.  Hope I remember!  Happy Sunday folks :)

Happy 2013!

Yes, I am 23 days late but just wanted to greet everyone a happy new year.  I wish that your year is off to a good start and that 2013 will bring you many wonderful things!  May we all have an abundant supply of happiness, good health, love and of course luck... just like this adorable grandma and her lovely white kitty! 

Here is a brief description that I got from the site:

catstagram

I've been missing my cats a lot.  There is a stupid "no pets" policy here in our new place so the boys are in my mom's flat.  Luckily I just live 5 minutes away so I still get to visit them pretty often...  But I really miss having them around 24/7.  I miss Nug hugs at night and seeing Kumo go crazy - which happens a lot :P

When I go home I try to take a lot of photos so I can post them on my instagram (follow me, Meowbykate :D).  I love going through the album when I think of them.  Also glad that my mom and little sister keep me updated with Nug and Kumo pics on their accounts :D

Things that make me happy

Here is another random list (with photos) of the things that make me happy.  Hope to add a lot more things to this list this 2013. 
Awesome family vacation
Last year I was able to go back to Las Casas Filipinas de Azucar - but this time with my mom and siblings :)  We had a great time looking at all the old houses and just hanging out.  Hope to have more family vacations this year.

Potato skins at Meat Plus in Subic!  Too bad that the place is 3 hours away :(  We have to go back soon!

I randomly picked up and opened this book during one of our library visits to Bataan. Inside I found this very touching note

My good friend Jovan invited me to face paint at the hospital Christmas party where I met a lot of wonderful people and stormtroopers!

I'm sorry I let you rot

If there is one thing that I really hate, it's wasting food.  I feel sad thinking about how much good food people throw out on a daily basis.  This year (yes, this is my new year's resolution :D) I promise to be more aware of the food we buy and make sure that we do not waste any of it.

Anyway, here are some photos of the ones that did not make it in my kitchen :(  Huhu.
